ORANGE SQUARES
CRUST:
2C gluten-free all purpose flour
1 tsp salt
1 tsp baking soda
2C coconut
¾C sugar
1C margarine
FILLING:
1½C sugar
4 heaping tbsp custard powder
1½C boiling water
Juice & rind of 1 orange
1 tbsp butter
Mix crust ingredients *saving a small amount for topping. Cook filling,
add butter when you remove from stove. Press dry ingredients into
9 X 13 pan. Spread filling over base, sprinkle remaining flour
mixture on top. Bake at 350° for 30 minutes.
The squares are delicious but somewhat gooey the first day.
* I usually keep about 1 cup aside for topping
