CHEESEY - TOP CHICKEN OR TURKEY CASSEROLE
2cups cooked chicken or turkey, cut in bite sized pieces
2 cups sauce (recipe below)
2 cups vegetables (mixed frozen vegetables or your choice of any combination of cooked fresh or leftover vegetables)

SAUCE: ¼ cup butter
¼ cup rice flour
1 tbsp dried minced onion
¼ tsp salt
¼ tsp dry mustard
1/8 tsp pepper
1 cup milk
1 cup chicken broth
Method: Melt butter in a saucepan on low heat, stir in rice flour and seasonings. Gradually add milk and broth, stirring constantly and cook until the sauce thickens. Add chicken and vegetables and place in casserole dish. Heat in 350 degree oven for 15 minutes as you prepare topping.

TOPPING: CHEESEY DROP BISCUITS
¾ cup rice flour ½ tsp salt
¼ cup cornstarch 1 Tbsp sugar
½ cup tapioca flour 2 eggs
2 tsp GF baking powder 1/3 cup GF cooking oil
1 tsp xanthan gum ½ cup milk
1 cup grated old cheddar cheese
Method: Mix together dry ingredients and grated cheese. Add eggs, (Do not beat before adding), oil and milk, then beat. Mix well and drop by tablespoon on top of hot casserole. Bake extras on a cookie sheet for 10 to 12 at 400 degrees. Bake casserole another 30 to 40 minutes until the topping is golden brown. Enjoy!
