BLACK BEAN AND CORN SALAD
Salad
1 can(19oz.) black beans drained
1 can (12 oz.) corn kernels drained
1 cup chopped tomatoes
1/2 cup chopped green or red bell peppers
1/4 cup chopped fresh parsley
Dressing
2 Tbsp red wine vinegar or balsamic vinegar
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp minced garlic
1/2 tsp hot pepper sauce (optional)
1/4 tsp salt (not needed)
Black pepper
Combine salad ingredients in one bowl and set aside. Whisk together Dressing ingredients. Pour over salad. 3 days. Tastes great topped with black olives and crumbled Feta Cheese. Can also toss in some crunchy Tortilla chips.This keeps in the refrigerator for 3 days. Tortilla Chips just before serving. Excellent source of folacin. Moderate source of dietary Fiber.
