TASTERS CHOICE PEANUT BUTTER COOKIES
1/2 cup light or dark bean flour
1/2 cup brown sugar
3/4 cup cornstarch
2tbsp honey
1 cup crushed GF cereal flakes
2 teaspoons vanilla
3/4 cup sliced almonds, crushed
3/4c creamy peanut butter & 1/4c almond butter
2 teaspoons baking soda
cup liquid egg substitute or 2 eggs
1/2cup oil & 1/2cup apple sauce
Preheat oven to 350°,
In a medium bowl, whisk together the bean flour, cornstarch, cereal, almonds, and baking soda. Set aside.
In a large mixing bowl, beat together the oil, apple sauce, sugars, vanilla, peanut butter, almond butter and egg substitute. Stir in the flour mixture until well blended. Drop by teaspoons onto ungreased cookie sheets. Bake for 15 minutes or until browned and crisp. Makes 3 dozen 2” cookies.
